Week 21 Potato Soup, Oven Roasted Veggies, and a Raspberry Dessert

White Wine........ A lot of white wine in almost every meal in the potato soup with was all that great in the raspberry gratins that look amazing but I messed up the sauce that was supposed to be like a whipped cream but was a soup made from yolks, sugar, and white wine of coarse. the best was the vegetables that were fennel, fingerling potatoes, green beans, asparagus. the best thing on the menu. Next week is our last week of Ina Garten. Cant wait Nikki and Kelly and Dan are all comin!

SALTY. Wow. I put the required amount of salt in the potato soup and it was so salty that I we used it as a dip instead of a soup. Most everyone did not finish their soup. It also turned out the color of pea soup. I was very disappointed. However, I did learn that I should put the required amount of salt in "to taste" meaning, put the salt in until it tastes good. Don't put the whole required amount of salt in at once. Live and Learn.

The veggies were good. I even liked the fennel. I think I could eat veggies all day long.

The raspberry dessert tasted good. It just didn't have the consistency that we would have liked. Carl said he didn't cook it right. But I saw him follow the instructions to a T. Sometimes those things happen.

A special thanks goes out to LINDA who got all the food for us. We just didn't have time to go to the store this week. We are preparing to go on Spring Break.

Today was awesome because we had 3 guests. We had Lynne my sister and her daughter Aimee and also we had Daniel my nephew. It was a great night. Daniel brought the dessert again.
I loved the Soup. It was really good. It had a lot of robust flavor. It was made with tomato's and cream. MMMMMMM. Secondly I liked the fish. I thought it didn't have that overpowering fishy taste. I like that. The mustard sauce was tasty. The cucumber salad was a flop. We made a lot of it and it went to waste this week because nobody liked it.
I did feel like we should have had little mini cheese sandwiches. I grew up having cheese sandwiches with my tomato soup.

Well beside the stellar guest we had some goods and some BADS! The mustard fish was good flavorful sauce and as my dad said it didn't have a fishy taste. Also the soup was good and the soup was OK it had a strong flavor but I thought it should have been creamier. Lastly the creamy cucumber salad was not good... Cant wait till next week!!!

Week 19 Barefoot Cantessa Ina Garten Lemon Chicken, Butternut Squash Soup and Tomato Mozzarela salad

THIS WEEK WAS GREAT! It was so delicious oooohhhh! loved all of it the chicken was tangy and grilled good. Dad was very sceptical about cutting the chicken but i did it just fine. Also the tomato and fresh mozzarella salad was great it was sweet and zippy! Lastly we made roasted butternut squash soup. It had a curry taste and we put roasted coconut, and cashews, there were green onions and bananas but we left out the bananas. Kristina Johnson from our church came to and made a amazing blueberry cake!!! SO GOOD! Next week is on Thursday because my mom has apples of gold cant wait!

We had a fun night. Kristina Johnson came over from church. She brought a nice blueberry dessert to share. Daniel brought ice cream and we had a feast.
We had lemon chicken. I thought it was just ok. I did like the butternut squash soup. This was interesting. You cut the squash into cubes and cook it with some apples and onions. Then you puree it and mix it with some chicken broth. We then toasted some coconut and cashews to put on the top. See Picture. We also had sliced scallions for the top of the soup. See the picture with all the fixings on the top of the soup. I also like the tomato with fresh mozzarella on top.
The only thing I can't figure out is why she is called the barefoot contessa.

Week 18 Mushroom Soup, Beef Stroganoff and Nancy's Coleslaw

1 cup sugar

1 cup oil

1/3 cup mayo

1 teaspoon celery seed

1 chopped onion

1/2 cup cider viniger

1 medium cabbage shredded

This week was so great the slaw was good and the stroganoff great to! We had mushroom soup that wasn't on the menu but we needed it on the beef stroggie!! The slaw was so good and it had a slight tang that makes your mouth sing!!! Can't wait till next week Ina Garden!!!!(

This meal was fun to make. I watched Carl very closely and he only used a little butter. My body was having problems last week because of all the butter we had. Carl made a great mushroom soup with baby Bella mushrooms. We used some for the stroganoff and some we had as a starter. The Cole slaw was so easy to make. You mix the sugar and chopped onions together and set aside for 30 minutes. Then you mix everything together for your slaw. Wow was it good.

The stroganoff itself was OK. Then we remembered to add the 1 cup of sour cream. It tasted better then. I had mine on rice.

This week was filled with butter there was about 1/4 stick in each bowl of chowder! Shhhh my dad doesn't know. Oh and yes it was AMAZING! Also we had avocado and chicken with an avocado dressing it was delicious, zippy and creamy. And for dessert we had caramel apple cheesecake. Of course it was great! can't wait till next week more butter!

I was so full after this meal. The Avocado Chicken was excellent. The Chowder was terrific as well. Carl doesn't know it but I was supposed to put a cup of Mayo in the Avocado Chicken. I actually did that. But in the dressing I went a little light on the Mayo. I think Mayo has too many fat calories. Linda, Jamie and Dan all seemed to like the dinner. Thanks all for a fun night.
