Week 18 Mushroom Soup, Beef Stroganoff and Nancy's Coleslaw

Mushroom Soup

1 cup sugar

1 cup oil

1/3 cup mayo

1 teaspoon celery seed

1 chopped onion

1/2 cup cider viniger

1 medium cabbage shredded

This week was so great the slaw was good and the stroganoff great to! We had mushroom soup that wasn't on the menu but we needed it on the beef stroggie!! The slaw was so good and it had a slight tang that makes your mouth sing!!! Can't wait till next week Ina Garden!!!!(

This meal was fun to make. I watched Carl very closely and he only used a little butter. My body was having problems last week because of all the butter we had. Carl made a great mushroom soup with baby Bella mushrooms. We used some for the stroganoff and some we had as a starter. The Cole slaw was so easy to make. You mix the sugar and chopped onions together and set aside for 30 minutes. Then you mix everything together for your slaw. Wow was it good.

The stroganoff itself was OK. Then we remembered to add the 1 cup of sour cream. It tasted better then. I had mine on rice.

This week was filled with butter there was about 1/4 stick in each bowl of chowder! Shhhh my dad doesn't know. Oh and yes it was AMAZING! Also we had avocado and chicken with an avocado dressing it was delicious, zippy and creamy. And for dessert we had caramel apple cheesecake. Of course it was great! can't wait till next week more butter!

I was so full after this meal. The Avocado Chicken was excellent. The Chowder was terrific as well. Carl doesn't know it but I was supposed to put a cup of Mayo in the Avocado Chicken. I actually did that. But in the dressing I went a little light on the Mayo. I think Mayo has too many fat calories. Linda, Jamie and Dan all seemed to like the dinner. Thanks all for a fun night.

Week 16 Chicken Bog and Crunchy Potatoes

The chicken bog was great and the crunchy potatoes to! The chicken had sausage seasoning and vegetables. SO GOOD! the potatoes were boiled and then rolled in corn flakes with ranch seasoning. Both were great! Can't wait next week is cheesecake! YUMMM!

When I saw Carl put the stick of butter into the Chicken Bog, I knew that we were in for a rich meal. The bog included chicken, sausage, rice, and seasonings. I have had it for lunch as leftovers this week. It is really good. I mix it with some vegetables and it tastes real good.

My favorite thing was the potatoes. We cooked them in boiling water until they were a bit soft. We peeled them, and then rolled them in butter and then cornflakes and powdered ranch dip. Then we put them in the oven for a little more time. Yes, they were crunchy. Very tasty.

Well this meal was great the stuffed chicken and mashed potatoes. The chicken was stuffed with cream cheese, feta, herbs, etc. and the potatoes had butter and sour cream to make it creamy and delicious! Can't wait for some more butter next week!

We have entered into Southern Cooking. I've noticed quite a bit of butter being used for this meal.


This meal was fun because I got to see Carl smashing the chicken breasts with a pan. I was afraid for the granite counter top, so I made him pound them in the basement. He made them flat so that they could be filled and rolled up. They were wrapped in bacon. UMMMM.


The potatoes were awesome. It is hard to make potatoes bad with so much sour cream and butter.

Week 14 Mango Salsa Chicken with Chocolate Souffle

We had mango salsa chicken with snap peas and chocolate souffle. The Mango salsa was from the week before when we had the satays. The chicken was good it was cooked good and had a great flavor. The texture was kinda wierd but was ok. Alsothe chocolate souffle was good. The chocolate came threw nicely, A little strong for me but im not a dark chocolate eater. Can't wait till next week PAULA DEEN!

This meal was topped off with an excellent dessert. I'm going to start with that. It was a chocolate souffle. It came out of the oven warm and it was then served with the cardamon whipped topping. Carl made most of it. It turned out really good. The Mango Salsa Chicken was good, but not great. I did love the snap peas though. It was cool how Ming had us prepare them. First, you boil salted water and put them in for 2 minutes. You then dump them into ice water. They maintain a great taste when this happens.

Daniel came over for dinner and we all had a fun time.

Well this week was "Ridick" (ridiculous)! The beef states was amazing! the sweet potatoes well super! The Sauce for the Sates (beef) was mango salsa pureed. The sates had flank steak, scallions and shitake. YUMMMMM. the sweet potatoes were made with curry ginger oil baked till perfection! Can't wait till next week!

This was the best yet. No doubt about it. I felt like this dinner had the most taste of any we have done. The mushrooms were unbelievable. They exploded in your mouth.

We certainly had some help. Both Jamie and Linda came to the rescue because everyone had things to do later in the night and we were short on time.

I'm including the recipe so you can try it yourself.

We had very little left over and I had the remnants for lunch the next day. Wow it was good.


1 pound of flank steak cut diagonally 1/4 inch by 4 inches

1/2 pound of shitake mushrooms

1 bunch of scallions cut into 2 inch lengths

1/4 cup soy sauce

1/3 cup red wine

1 tablespoon sugar

3/4 cup oil

1 teaspoon ground pepper

as a dip

2 cups of mango salsa (this was nice, but you did not need it for the dinner)


Put the flank steak and mushrooms in the soy sauce, red wine, sugar, pepper and oil for 30 minutes.

Then skewer the mushrooms, flank steak and scallions.

Grill for 3 minutes each side.

Serve

We also made some sweet potato fries that were excellent as well. They did not have the flavor that we expected. We thought that after smelling the Curry oil marinade for a whole day, we would taste it more.

Week 12 My Crazy Chicken

Well this week we had chocolate pots De' creme and my crazy noodles. We all enjoyed the noodles it had a kick but a great taste. Also the pots were extremely chocolate and very good. we had Chris and Dan both over (they're both cousins). The pots had a delicious creme texture and a rich sweet and some what bitter taste that complemented the noodle beautifully. Can't wait till next week!

This was my favorite meal for a while. The noodles were really good. They had a little spice in them and the ground chicken was excellent.
Ingredients: 1 lb ground chicken, 1/2 cup onions, 1/2 cup scallions, 1/2 cup of basil, 2 teaspoons of sugar, 2 tablespoons of lime juice, 8 oz of rice noodles, 1 tablespoon sambal. It was easy and I will definitely keep this recipe.
The dessert was excellent. It was chocolate custard like. This was a little harder to make, but really good.
We had some help today. Dan came and helped cut up some things as well as washed the dishes. Also you can see by the pictures, Chris Vitale joined us today. It was great to have you Chris and Dan.
